Ingredients
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 red onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
Instructions
- In a large bowl, combine the black beans, kidney beans, chickpeas, red bell pepper, yellow bell pepper, red onion, and garlic.
- In a small bowl, whisk together the olive oil, cumin, chili powder, salt, and black pepper.
- Pour the dressing over the bean mixture and toss to coat.
- Cover and refrigerate for at least 1 hour to allow the flavors to meld.
