Ingredients

  • 4 large bell peppers
  • 1 cup cooked spelt
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish.
  • In a large bowl, combine the cooked spelt, diced onion, minced garlic, diced zucchini, cherry tomatoes, parsley, basil, feta cheese, olive oil, salt, and pepper. Mix well.
