Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup kalamata olives, pitted and halved
- 1/4 cup crumbled feta cheese
- 4 cups mixed greens
- 1/4 cup Greek yogurt
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F.
- Season chicken breasts with salt, pepper, and dried oregano.
- Bake chicken for 25-30 minutes or until cooked through.
- Let chicken cool for a few minutes before slicing into strips.
- In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, and salt and pepper to make the dressing.
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
- Add sliced chicken to the salad.
- Drizzle dressing over the salad and toss to combine.
- Serve immediately and enjoy!
