Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • 4 cups mixed greens
  • 1/4 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste

Instructions

  • Preheat oven to 375°F.
  • Season chicken breasts with salt, pepper, and dried oregano.
  • Bake chicken for 25-30 minutes or until cooked through.
  • Let chicken cool for a few minutes before slicing into strips.
  • In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, and salt and pepper to make the dressing.
  • In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
  • Add sliced chicken to the salad.
