Ingredients
- 1 lb chicken breast
- 1 cup quinoa
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 1 yellow squash
- 1 red onion
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F.
- Cut chicken breast into bite-sized pieces and season with garlic powder, paprika, cumin, salt, and pepper.
