Ingredients
- 1 lb beef stew meat, cut into bite-sized pieces
- 2 large potatoes, peeled and cut into chunks
- 1/2 cup roasted peanuts
- 1 can coconut milk
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp massaman curry paste
- 2 tbsp fish sauce
- 2 tbsp brown sugar
- 1 tbsp tamarind paste
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 2 tbsp vegetable oil
- 1 cup water
Instructions
- Heat the oil in a large pot over medium-high heat.
- Add the onion and garlic and sauté until softened, about 3 minutes.
- Add the beef and cook until browned on all sides, about 5 minutes.
- Stir in the curry paste, cumin, coriander, cinnamon, cardamom, cloves, and nutmeg and cook for 1 minute.
- Add the potatoes, peanuts, coconut milk, water, fish sauce, brown sugar, and tamarind paste and stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour, stirring occasionally.
- Serve hot with rice or noodles.
