Ingredients

  • 1 lb beef stew meat, cut into bite-sized pieces
  • 2 large potatoes, peeled and cut into chunks
  • 1/2 cup roasted peanuts
  • 1 can coconut milk
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp massaman curry paste
  • 2 tbsp fish sauce
  • 2 tbsp brown sugar
  • 1 tbsp tamarind paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 2 tbsp vegetable oil
  • 1 cup water

Instructions

  • Heat the oil in a large pot over medium-high heat.
  • Add the onion and garlic and sauté until softened, about 3 minutes.
  • Add the beef and cook until browned on all sides, about 5 minutes.
  • Stir in the curry paste, cumin, coriander, cinnamon, cardamom, cloves, and nutmeg and cook for 1 minute.
  • Add the potatoes, peanuts, coconut milk, water, fish sauce, brown sugar, and tamarind paste and stir to combine.
  • Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour, stirring occasionally.
  • Serve hot with rice or noodles.
