Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1/2 cup cream soda
  • 1/2 teaspoon vanilla extract
  • 1/4 cup butterscotch chips

Instructions

  • Preheat the oven to 350°F.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Add the dry ingredients to the butter mixture in three parts, alternating with the buttermilk and cream soda.
  • Stir in the vanilla extract and butterscotch chips.
  • Line a muffin tin with cupcake liners and fill each liner 2/3 full with batter.
  • Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
