Ingredients
- 250g macaroni
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 carrot, grated
- 1 zucchini, diced
- 1 can diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Cook the macaroni according to package instructions. Drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.
- Add the red and green bell peppers, carrot, and zucchini. Cook until the vegetables are tender.
- Stir in the diced tomatoes, dried oregano, dried basil, salt, and pepper. Simmer for 10 minutes.
