Ingredients

  • 250g macaroni
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 carrot, grated
  • 1 zucchini, diced
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  • Cook the macaroni according to package instructions. Drain and set aside.
  • In a large pan, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.
  • Add the red and green bell peppers, carrot, and zucchini. Cook until the vegetables are tender.
  • Stir in the diced tomatoes, dried oregano, dried basil, salt, and pepper. Simmer for 10 minutes.
  • Add the cooked macaroni to the pan and toss to coat with the sauce.
  • Serve hot with grated Parmesan cheese on top.
