Ingredients
- 1 cup dried lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 tablespoon tomato paste
- 1 bay leaf
- 1/4 cup chopped fresh parsley
Instructions
- Rinse lentils and pick out any debris.
- In a large pot, heat olive oil over medium heat.
- Add onion, garlic, carrot, and celery. Cook until vegetables are soft, about 5 minutes.
- Add cumin, paprika, and salt. Cook for 1 minute.
- Add lentils, vegetable broth, diced tomatoes, tomato paste, and bay leaf. Bring to a boil.
- Reduce heat and simmer for 30-40 minutes, or until lentils are tender.
- Remove bay leaf and stir in chopped parsley.
- Serve hot and enjoy!
