Ingredients

  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • 1/4 cup chopped fresh parsley

Instructions

  • Rinse lentils and pick out any debris.
  • In a large pot, heat olive oil over medium heat.
  • Add onion, garlic, carrot, and celery. Cook until vegetables are soft, about 5 minutes.
  • Add cumin, paprika, and salt. Cook for 1 minute.
  • Add lentils, vegetable broth, diced tomatoes, tomato paste, and bay leaf. Bring to a boil.
  • Reduce heat and simmer for 30-40 minutes, or until lentils are tender.
  • Remove bay leaf and stir in chopped parsley.
  • Serve hot and enjoy!
