Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sweetener
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream

Instructions

  • Preheat oven to 325°F.
  • In a medium bowl, combine almond flour and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  • In a large bowl, beat cream cheese and sweetener until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla and sour cream.
  • Pour mixture over crust in pan. Bake for 45-50 minutes or until center is almost set.
  • Cool on a wire rack for 10 minutes. Loosen sides of pan with a knife. Cool for an additional hour.
  • Refrigerate for at least 4 hours or overnight.
  • Serve and enjoy!
