Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup soy sauce
  • 2 tablespoons red wine vinegar
  • 1 tablespoon oyster sauce
  • 4 cloves garlic, minced
  • 1 tablespoon Aji Amarillo paste
  • 1 red onion, thickly sliced
  • 2 Roma tomatoes, sliced
  • 2 cups frozen french fries
  • 1/4 cup fresh cilantro, chopped

Directions

    Season beef with cumin and pepper.

    Heat olive oil in a wok over high heat and sear beef for 2-3 minutes. Remove from wok.

    In the same wok, add onions and cook until softened, about 2-3 minutes.

    Return beef to the wok, then add soy sauce, vinegar, oyster sauce, and Aji Amarillo paste. Stir to combine.
