Ingredients
- 2 cups vegetable broth
- 1 cup chopped vegetables (carrots, celery, bell peppers)
- 1 cup cooked quinoa
- 1 cup almond milk
- 1 tablespoon nutritional yeast
- 1 teaspoon turmeric
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable broth over medium heat.
- Add the chopped vegetables and cook until they are tender, about 5 minutes.
- Stir in the cooked quinoa, almond milk, nutritional yeast, turmeric, salt, and pepper.
