Ingredients
- 1 cup lentils
- 2 cups vegetable broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- 1. Rinse the lentils under cold water and drain.
- 2. In a large pot, heat the olive oil over medium heat.
- 3. Add the onion, garlic, carrot, and celery to the pot and sauté until the vegetables are tender.
- 4. Add the lentils, vegetable broth, cumin, paprika, turmeric, salt, and pepper to the pot.
- 5. Bring the mixture to a boil, then reduce the heat to low and simmer for about 20 minutes or until the lentils are tender.
