Ingredients

  • 1 cup lentils
  • 2 chicken breasts
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chicken broth
  • 2 tablespoons olive oil

Instructions

  • 1. In a large pot, heat olive oil over medium heat.
  • 2. Add diced onion, minced garlic, diced carrot, and diced celery. Cook until vegetables are softened, about 5 minutes.
  • 3. Add cumin, paprika, salt, and black pepper. Stir to coat the vegetables with the spices.
  • 4. Add lentils and chicken broth to the pot. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until lentils are tender.
