Ingredients
- 1 cup lentils
- 2 chicken breasts
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups chicken broth
- 2 tablespoons olive oil
Instructions
- 1. In a large pot, heat olive oil over medium heat.
- 2. Add diced onion, minced garlic, diced carrot, and diced celery. Cook until vegetables are softened, about 5 minutes.
- 3. Add cumin, paprika, salt, and black pepper. Stir to coat the vegetables with the spices.
- 4. Add lentils and chicken broth to the pot. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until lentils are tender.
- 5. While lentils are cooking, season chicken breasts with salt and pepper. Heat a separate pan over medium-high heat and cook chicken until browned and cooked through, about 6-8 minutes per side. Remove from heat and let rest for a few minutes before slicing.
- 6. Once lentils are tender, remove from heat and let cool slightly. Use an immersion blender or regular blender to puree the lentils until smooth.
- 7. Serve the lentil puree topped with sliced chicken breasts. Enjoy!
