Ingredients
- 1 cup lentils
- 4 slices bacon, cooked and crumbled
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- 1. Rinse the lentils under cold water and drain.
- 2. In a large pot, cook the bacon until crispy. Remove from the pot and crumble.
- 3. In the same pot, sauté the onion, garlic, carrot, and celery until softened.
- 4. Add the lentils, diced tomatoes, vegetable broth, smoked paprika, dried thyme, salt, and pepper to the pot.
- 5. Bring the mixture to a boil, then reduce heat and simmer for about 30 minutes or until the lentils are tender.
- 6. Serve hot, garnished with the crumbled bacon.
