Ingredients

  • 1 cup lentils
  • 4 slices bacon, cooked and crumbled
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  • 1. Rinse the lentils under cold water and drain.
  • 2. In a large pot, cook the bacon until crispy. Remove from the pot and crumble.
  • 3. In the same pot, sauté the onion, garlic, carrot, and celery until softened.
  • 4. Add the lentils, diced tomatoes, vegetable broth, smoked paprika, dried thyme, salt, and pepper to the pot.
  • 5. Bring the mixture to a boil, then reduce heat and simmer for about 30 minutes or until the lentils are tender.
