Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 1 cup cherry tomatoes
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 cups cooked rice

Instructions

  • In a large bowl, whisk together the olive oil, lemon juice, garlic, cumin, paprika, cinnamon, salt, and black pepper.
  • Add the chicken breasts to the bowl and toss to coat in the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  • Preheat the oven to 400°F.
  • Arrange the chicken breasts in a baking dish and pour any remaining marinade over the top.
  • Add the sliced bell peppers and onion to the dish, arranging them around the chicken.
  • Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  • Sprinkle the cherry tomatoes, parsley, and mint over the top of the dish.
