Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 1 cup cherry tomatoes
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 2 cups cooked rice
Instructions
- In a large bowl, whisk together the olive oil, lemon juice, garlic, cumin, paprika, cinnamon, salt, and black pepper.
- Add the chicken breasts to the bowl and toss to coat in the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
- Preheat the oven to 400°F.
- Arrange the chicken breasts in a baking dish and pour any remaining marinade over the top.
- Add the sliced bell peppers and onion to the dish, arranging them around the chicken.
- Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Sprinkle the cherry tomatoes, parsley, and mint over the top of the dish.
- Serve hot with cooked rice.
