Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/2 red onion, diced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Rinse quinoa in a fine mesh strainer and place in a medium saucepan with 2 cups of water.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for 15-20 minutes, or until all the water is absorbed and the quinoa is tender.
- Remove from heat and let cool.
- In a large bowl, combine the cooled quinoa, cucumber, bell peppers, red onion, parsley, and mint.
- In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
