Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup broccoli florets
  • 1 cup edamame
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  • Rinse quinoa in a fine mesh strainer and place in a medium saucepan with water. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes, or until water is absorbed and quinoa is tender.
  • While quinoa is cooking, heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  • Add red bell pepper, zucchini, and broccoli to the skillet and cook for 5-7 minutes, or until vegetables are tender.
  • Stir in edamame and cook for an additional 2-3 minutes.
  • Divide quinoa among 4 bowls and top with vegetable mixture. Add avocado slices and cilantro to each bowl.
  • Drizzle lime juice over each bowl and season with salt and pepper to taste.
