Lean and Green Quinoa Bowl
This quinoa bowl is packed with nutritious ingredients and is perfect for a healthy lunch or dinner.
Nutrition Per Serving
- 1 cup quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1 cup broccoli florets
- 1 cup edamame
- 1 avocado, sliced
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- Salt and pepper to taste
- Rinse quinoa in a fine mesh strainer and place in a medium saucepan with water. Bring to a boil, then reduce heat to low and cover. Cook for 15-20 minutes, or until water is absorbed and quinoa is tender.
- While quinoa is cooking, heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
- Add red bell pepper, zucchini, and broccoli to the skillet and cook for 5-7 minutes, or until vegetables are tender.
- Stir in edamame and cook for an additional 2-3 minutes.
- Divide quinoa among 4 bowls and top with vegetable mixture. Add avocado slices and cilantro to each bowl.
- Drizzle lime juice over each bowl and season with salt and pepper to taste.
