Ingredients
- 1 lb boneless, skinless chicken breast, sliced into thin strips
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 1/4 cup low-sodium soy sauce
- 1 tbsp honey
- 1 tbsp cornstarch
- 1/4 cup water
- 1/4 cup chopped scallions
- 1 tbsp sesame seeds
Instructions
- In a large skillet or wok, heat 1 tbsp of olive oil over high heat.
- Add the chicken and stir-fry for 5-7 minutes, until browned and cooked through. Remove from the skillet and set aside.
- Add the remaining 1 tbsp of olive oil to the skillet.
- Add the bell peppers and onion and stir-fry for 3-4 minutes, until slightly softened.
- Add the garlic and ginger and stir-fry for 1-2 minutes, until fragrant.
- In a small bowl, whisk together the soy sauce, honey, cornstarch, and water.
- Add the chicken back to the skillet and pour the soy sauce mixture over the top.
- Stir-fry for 2-3 minutes, until the sauce has thickened and the chicken and veggies are coated.
- Garnish with chopped scallions and sesame seeds before serving.
