Ingredients

  • 1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz.) black beans, drained and rinsed
  • 1 can (15 oz.) kidney beans, drained and rinsed
  • 1 can (14.5 oz.) diced tomatoes
  • 1 can (8 oz.) tomato sauce
  • 1 cup chicken broth
  • 2 tbsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. paprika
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup chopped fresh cilantro

Instructions

  • In a large pot or Dutch oven, heat 1 tbsp. olive oil over medium-high heat.
  • Add the chicken and cook until browned on all sides, about 5 minutes.
  • Add the onion and garlic and cook until softened, about 3 minutes.
  • Add the beans, diced tomatoes, tomato sauce, chicken broth, chili powder, cumin, paprika, salt, and black pepper.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Stir in the cilantro and serve hot.
