Ingredients
- 1 cup basmati rice
- 1 cup brown lentils
- 1 cup elbow macaroni
- 1 can chickpeas, drained and rinsed
- 1 large onion, sliced thinly
- 3 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 2 tbsp tomato paste
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- 1 tsp baharat spice
- Salt and pepper to taste
- Olive oil for cooking

Cook the basmati rice according to package instructions; set aside.

Simmer lentils in boiling water until tender, about 20-25 minutes; drain.

Cook macaroni until al dente; drain and set aside.

In a large pan, heat olive oil over medium heat, sauté onions until golden and crispy; remove and set aside.

In the same pan, add garlic, cook for 1 minute, then add tomatoes, tomato paste, cumin, coriander, cinnamon, cayenne, salt, and pepper; simmer for 10-15 minutes to thicken.

Roast chickpeas on a baking sheet in a preheated oven at 400°F (200°C) for about 15 minutes until crispy.

Layer rice, lentils, macaroni, and roasted chickpeas in serving bowls.
