Ingredients

  • 1 cup chopped carrots
  • 1 cup chopped potatoes
  • 1 cup chopped cauliflower
  • 1 cup chopped green beans
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • 1 cup chopped tomatoes
  • 1 cup coconut milk
  • 1/2 cup cashews
  • 2 tbsp ghee or oil
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt to taste
  • Fresh coriander leaves, for garnish

Directions

    Heat ghee in a large pan and add cumin seeds. Let them sizzle.

    Add chopped onions and sauté until golden brown.

    Stir in the chopped carrots, potatoes, cauliflower, green beans, and bell peppers. Sauté for 5-7 minutes.

    Mix in coriander powder, garam masala, turmeric, red chili powder, and salt, stirring well.

    Add the chopped tomatoes and cook until they soften.

    Pour in coconut milk and add the cashews. Mix thoroughly.

Chef's tip
