Ingredients

  • 1 cup chopped carrots
  • 1 cup chopped potatoes
  • 1 cup chopped cauliflower
  • 1 cup chopped green beans
  • 1 cup chopped bell peppers
  • 1 cup chopped onions
  • 1 cup chopped tomatoes
  • 1 cup coconut milk
  • 1/2 cup cashews
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt to taste

Instructions

  • In a pan, heat ghee and add cumin seeds.
  • Add onions and sauté until golden brown.
  • Add all the chopped vegetables and sauté for 5-7 minutes.
  • Add coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well.
  • Add coconut milk and cashews. Mix well.
  • Cover and cook for 10-15 minutes or until the vegetables are tender.
  • Garnish with fresh coriander leaves and serve hot with rice or naan.
