Ingredients
- 1 cup chopped carrots
- 1 cup chopped potatoes
- 1 cup chopped cauliflower
- 1 cup chopped green beans
- 1 cup chopped bell peppers
- 1 cup chopped onions
- 1 cup chopped tomatoes
- 1 cup coconut milk
- 1/2 cup cashews
- 2 tbsp ghee
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 tsp turmeric powder
- 1 tsp red chili powder
- Salt to taste
Instructions
- In a pan, heat ghee and add cumin seeds.
- Add onions and sauté until golden brown.
- Add all the chopped vegetables and sauté for 5-7 minutes.
- Add coriander powder, garam masala, turmeric powder, red chili powder, and salt. Mix well.
- Add coconut milk and cashews. Mix well.
- Cover and cook for 10-15 minutes or until the vegetables are tender.
- Garnish with fresh coriander leaves and serve hot with rice or naan.
