Ingredients
- 1 lb. mixed seafood (shrimp, mussels, squid, etc.)
- 4 cups chicken or vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tbsp. soy sauce
- 1 tbsp. gochujang (Korean chili paste)
- 1 tbsp. sesame oil
- 1 tbsp. rice vinegar
- 1 tbsp. sugar
- 1 cup chopped kale
- 1 cup sliced mushrooms
- 1 green onion, sliced
Instructions
- In a large pot, heat the sesame oil over medium heat.
- Add the onion and garlic and sauté until softened.
- Add the broth, soy sauce, gochujang, rice vinegar, and sugar. Bring to a boil.
- Add the seafood, kale, and mushrooms. Reduce heat and simmer for 10-15 minutes, or until seafood is cooked through.
