Ingredients
- 8 oz udon noodles
- 2 tbsp gochujang paste
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp sugar
- 1/2 cup sliced scallions
- 1/2 cup sliced carrots
- 1/2 cup sliced bell peppers
- 1/2 cup sliced mushrooms
- 1/2 cup tofu, cubed
- 2 cloves garlic, minced
- 1 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Cook udon noodles according to package instructions, then drain and set aside.
- In a small bowl, mix together gochujang paste, soy sauce, sesame oil, and sugar to make the sauce.
- In a large pan, heat vegetable oil over medium heat. Add garlic and cook until fragrant.
- Add tofu and vegetables to the pan, stirring occasionally until vegetables are tender.
- Add cooked udon noodles and sauce to the pan, tossing everything together until well combined.
- Season with salt and pepper to taste.
- Serve hot, garnished with sliced scallions.
