Ingredients

  • 8 oz udon noodles
  • 2 tbsp gochujang paste
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/2 cup sliced scallions
  • 1/2 cup sliced carrots
  • 1/2 cup sliced bell peppers
  • 1/2 cup sliced mushrooms
  • 1/2 cup tofu, cubed
  • 2 cloves garlic, minced
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  • Cook udon noodles according to package instructions, then drain and set aside.
  • In a small bowl, mix together gochujang paste, soy sauce, sesame oil, and sugar to make the sauce.
  • In a large pan, heat vegetable oil over medium heat. Add garlic and cook until fragrant.
  • Add tofu and vegetables to the pan, stirring occasionally until vegetables are tender.
  • Add cooked udon noodles and sauce to the pan, tossing everything together until well combined.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with sliced scallions.
