About this recipe

Enjoy a spicy and savory twist on classic udon noodles with Korean Gochujang. This dish combines the rich flavors of gochujang paste with fresh vegetables and tofu, creating a quick and satisfying meal perfect for any night of the week.

Ingredients

  • 8 oz udon noodles
  • 2 tbsp gochujang paste
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/2 cup sliced scallions
  • 1/2 cup sliced carrots
  • 1/2 cup sliced bell peppers
  • 1/2 cup sliced mushrooms
  • 1/2 cup tofu, cubed
  • 2 cloves garlic, minced
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

Directions

  1. 1

Boil water and cook udon noodles according to package instructions until just tender; drain and set aside.

  2. 2

In a small bowl, whisk together gochujang, soy sauce, sesame oil, and sugar to make a sauce.

  3. 3

Heat vegetable oil in a large pan over medium heat. Add garlic and sauté until fragrant.

  4. 4

Add tofu and vegetables to the pan, stirring occasionally until the vegetables are tender.

  5. 5

Add the cooked noodles and sauce to the pan, tossing to combine evenly.

  6. 6

Season with salt and pepper to taste, then serve hot garnished with scallions.

Chef's tip

Ensure to cook the udon noodles al dente to prevent a soggy texture. Adjust gochujang levels to control heat.
