- 2 packs Kibun Udon Noodles
- 4 cups vegetable broth
- 2 tablespoons miso paste
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon grated ginger
- 2 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup sliced celery
- 1 cup sliced cucumber
- 1 green onion, sliced
- 1 tablespoon sesame seeds
Instructions
- In a large pot, bring the vegetable broth to a boil.
- Add the miso paste, soy sauce, sesame oil, ginger, and garlic. Stir to combine.
- Add the broccoli, celery, and cucumber. Cook for 5-7 minutes, until the vegetables are tender.
- Meanwhile, cook the Kibun Udon Noodles according to package instructions.
