Ingredients

  • 2 cups fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1/2 cup extra virgin olive oil
  • Salt and pepper to taste
  • 1 package of keto-friendly pasta
  • Optional: cherry tomatoes and grated Parmesan cheese for garnish

Instructions

  • In a food processor, combine the basil leaves, Parmesan cheese, pine nuts, and garlic. Pulse until well combined.
  • Slowly drizzle in the olive oil while the food processor is running. Continue blending until the mixture is smooth and creamy. Season with salt and pepper to taste.
  • Cook the keto-friendly pasta according to the package instructions. Drain and set aside.
  • In a large skillet, heat a tablespoon of olive oil over medium heat. Add the cooked pasta and pesto sauce to the skillet. Toss until the pasta is well coated with the sauce.
  • Optional: Add cherry tomatoes and grated Parmesan cheese for garnish.
  • Serve hot and enjoy!
