Ingredients
- 2 cups fresh basil leaves
- 1/2 cup grated Parmesan cheese
- 1/4 cup pine nuts
- 2 cloves garlic
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
- 1 package of keto-friendly pasta
- Optional: cherry tomatoes and grated Parmesan cheese for garnish
Instructions
- In a food processor, combine the basil leaves, Parmesan cheese, pine nuts, and garlic. Pulse until well combined.
- Slowly drizzle in the olive oil while the food processor is running. Continue blending until the mixture is smooth and creamy. Season with salt and pepper to taste.
- Cook the keto-friendly pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add the cooked pasta and pesto sauce to the skillet. Toss until the pasta is well coated with the sauce.
- Optional: Add cherry tomatoes and grated Parmesan cheese for garnish.
