Ingredients
- 4 large eggs
- 1/4 cup coconut flour
- 1/4 cup almond flour
- 1/4 cup heavy cream
- 1/4 cup unsweetened almond milk
- 2 tbsp. erythritol
- 1 tsp. baking powder
- 1/2 tsp. vanilla extract
- 1/4 tsp. salt
- 2 tbsp. butter, melted
Instructions
- In a large bowl, whisk together the eggs, coconut flour, almond flour, heavy cream, almond milk, erythritol, baking powder, vanilla extract, and salt until smooth.
- Heat a non-stick skillet over medium heat. Add the melted butter and swirl to coat the pan.
- Using a 1/4 cup measure, pour the batter onto the skillet. Cook until bubbles form on the surface and the edges are set, about 2-3 minutes.
- Flip the pancake and cook for an additional 1-2 minutes, until golden brown.
- Repeat with the remaining batter, adding more butter to the skillet as needed.
