Ingredients

  • 1 cup almond flour
  • 1/2 cup shredded carrots
  • 1/4 cup coconut oil, melted
  • 1/4 cup unsweetened shredded coconut
  • 2 tbsp. granulated sweetener (such as Swerve)
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. salt
  • 1/4 cup chopped pecans (optional)

Instructions

  • Preheat oven to 350°F.
  • In a large bowl, mix together almond flour, shredded carrots, melted coconut oil, shredded coconut, sweetener, cinnamon, ginger, nutmeg, and salt until well combined.
  • Fold in chopped pecans, if using.
  • Using a cookie scoop or spoon, form mixture into 1-inch balls and place on a baking sheet lined with parchment paper.
  • Bake for 12-15 minutes, or until lightly golden brown.
  • Let cool for 5 minutes before serving.
