Ingredients
- 1 cup almond flour
- 1/2 cup shredded carrots
- 1/4 cup coconut oil, melted
- 1/4 cup unsweetened shredded coconut
- 2 tbsp. granulated sweetener (such as Swerve)
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground nutmeg
- 1/4 tsp. salt
- 1/4 cup chopped pecans (optional)
Instructions
- Preheat oven to 350°F.
- In a large bowl, mix together almond flour, shredded carrots, melted coconut oil, shredded coconut, sweetener, cinnamon, ginger, nutmeg, and salt until well combined.
- Fold in chopped pecans, if using.
- Using a cookie scoop or spoon, form mixture into 1-inch balls and place on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until lightly golden brown.
- Let cool for 5 minutes before serving.
