About this recipe

This keto butternut turkey soup is a perfect blend of savory and creamy flavors. Ground turkey pairs delightfully with the natural sweetness of butternut squash, all brought together in a comforting broth. It's an ideal dish for those chilly nights when you crave something delicious and healthy.

Ingredients

  • 1 lb ground turkey
  • 1 small butternut squash, peeled and cubed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup heavy cream
  • 1/2 tsp ground turmeric
  • 1 tsp grated ginger

Directions

  1. 1

Brown the ground turkey in a large pot over medium heat.

  2. 2

Add the chopped onion and garlic; cook for 3-4 minutes until aromatic.

  3. 3

Stir in the cubed butternut squash, cooking for another 3-4 minutes.

  4. 4

Pour in the chicken broth, add thyme, sage, turmeric, ginger, salt, and pepper. Bring to a boil.

  5. 5

Reduce heat and simmer for 20 minutes, or until squash is tender.

  6. 6

Stir in the heavy cream and cook for an additional 5 minutes.

  7. 7

Adjust seasoning to taste and serve hot.

Chef's tip

Consider using fresh herbs for a brighter flavor, and adjust turmeric and ginger quantities to personal taste.
