About this recipe

Enjoy a delicious, keto-friendly dish that's both healthy and satisfying. This buttery salmon pairs perfectly with freshly sautéed spinach, creating a meal that's rich in flavor and nutrients. Perfect for a quick weeknight dinner while keeping carb counts low.

Ingredients

  • 4 salmon fillets
  • 4 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups fresh spinach
  • 1 lemon, sliced
  • 2 tbsp fresh parsley, chopped

Directions

  1. 1

Preheat your oven to 400°F (200°C).

  2. 2

In a skillet, melt the butter over medium heat. Add garlic, thyme, rosemary, salt, and pepper; cook until fragrant, about 2 minutes.

  3. 3

Place salmon fillets in the skillet, cooking each side for 2-3 minutes until browned.

  4. 4

Transfer the skillet to the oven and bake for 10-12 minutes, or until the salmon is cooked through.

  5. 5

While salmon bakes, sauté spinach in a separate pan over medium heat until wilted.

  6. 6

Serve the salmon topped with parsley and lemon slices, alongside the sautéed spinach.

Chef's tip

Using a cast-iron skillet can enhance the browning of the salmon. Adjust oven time based on thickness of the fillets.
