Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 small red onion, diced
- 1 can black beans, drained and rinsed
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- 1. In a medium saucepan, bring the vegetable broth to a boil.
- 2. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes until quinoa is cooked and liquid is absorbed.
