Ingredients
- 2 eggs
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/4 cup chopped tomato
- 1/4 cup shredded cheddar cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- 1. Heat olive oil in a non-stick skillet over medium heat.
- 2. Add onion and bell pepper and sauté until softened, about 3 minutes.
- 3. Add tomato and cook for another 2 minutes.
- 4. Crack eggs into the skillet and season with salt and pepper.
- 5. Cook until the whites are set but the yolks are still runny, about 3-4 minutes.
- 6. Sprinkle shredded cheddar cheese over the eggs and cover the skillet with a lid.
- 7. Cook until the cheese is melted, about 1-2 minutes.
