Ingredients

  • 2 eggs
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 1/4 cup chopped tomato
  • 1/4 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  • 1. Heat olive oil in a non-stick skillet over medium heat.
  • 2. Add onion and bell pepper and sauté until softened, about 3 minutes.
  • 3. Add tomato and cook for another 2 minutes.
