Ingredients

  • 1 cup basmati rice
  • 1 cup mixed vegetables (carrots, peas, beans)
  • 1/2 cup paneer (cottage cheese), diced
  • 1/4 cup cashews, chopped
  • 2 tablespoons ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnishing

Instructions

  • Wash the basmati rice and soak it in water for 30 minutes.
  • In a large pan, heat ghee and add cumin seeds.
  • Once the cumin seeds splutter, add ginger-garlic paste and sauté for a minute.
  • Add the mixed vegetables and paneer. Cook for 5 minutes.
  • Drain the soaked rice and add it to the pan. Mix well.
  • Add turmeric powder, red chili powder, garam masala, and salt. Mix again.
  • Add 2 cups of water and bring it to a boil.
  • Reduce the heat, cover the pan, and let it simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
  • Garnish with chopped cashews and fresh coriander leaves.
  • Serve hot and enjoy the Jain Delight!
