Ingredients
- 1 cup basmati rice
- 1 cup mixed vegetables (carrots, peas, beans)
- 1/2 cup paneer (cottage cheese), diced
- 1/4 cup cashews, chopped
- 2 tablespoons ghee (clarified butter)
- 1 teaspoon cumin seeds
- 1 teaspoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnishing
Instructions
- Wash the basmati rice and soak it in water for 30 minutes.
- In a large pan, heat ghee and add cumin seeds.
- Once the cumin seeds splutter, add ginger-garlic paste and sauté for a minute.
- Add the mixed vegetables and paneer. Cook for 5 minutes.
- Drain the soaked rice and add it to the pan. Mix well.
- Add turmeric powder, red chili powder, garam masala, and salt. Mix again.
- Add 2 cups of water and bring it to a boil.
- Reduce the heat, cover the pan, and let it simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
- Garnish with chopped cashews and fresh coriander leaves.
- Serve hot and enjoy the Jain Delight!
