Ingredients
- 1 can of jackfruit
- 1 tablespoon olive oil
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8-10 small corn tortillas
- 1/2 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup chopped cilantro
- 1 avocado, sliced
- 1 lime, cut into wedges
Instructions
- Preheat oven to 400°F.
- Drain and rinse the jackfruit. Cut off the hard core and shred the jackfruit with a fork.
- In a bowl, mix together the olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add the shredded jackfruit and toss to coat.
- Spread the jackfruit out on a baking sheet and bake for 20-25 minutes, until slightly crispy.
- While the jackfruit is baking, warm the tortillas in the oven or on the stovetop.
- Assemble the tacos by placing a spoonful of jackfruit on each tortilla, then topping with diced tomatoes, red onion, cilantro, and avocado slices. Squeeze a lime wedge over each taco before serving.
