Ingredients

  • 1 can of jackfruit
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8-10 small corn tortillas
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup chopped cilantro
  • 1 avocado, sliced
  • 1 lime, cut into wedges

Instructions

  • Preheat oven to 400°F.
  • Drain and rinse the jackfruit. Cut off the hard core and shred the jackfruit with a fork.
  • In a bowl, mix together the olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper. Add the shredded jackfruit and toss to coat.
  • Spread the jackfruit out on a baking sheet and bake for 20-25 minutes, until slightly crispy.
  • While the jackfruit is baking, warm the tortillas in the oven or on the stovetop.
  • Assemble the tacos by placing a spoonful of jackfruit on each tortilla, then topping with diced tomatoes, red onion, cilantro, and avocado slices. Squeeze a lime wedge over each taco before serving.
