Ingredients
- 2 cans of young green jackfruit in brine
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 cup of BBQ sauce
- 1 tablespoon of olive oil
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of cumin
- Salt and pepper to taste
Instructions
- 1. Drain and rinse the jackfruit.
- 2. Heat olive oil in a large skillet over medium heat.
- 3. Add the diced onion and minced garlic to the skillet and sauté until translucent.
- 4. Add the jackfruit to the skillet and cook for 5 minutes, stirring occasionally.
- 5. Use a fork or potato masher to shred the jackfruit into smaller pieces.
- 6. Add the smoked paprika, cumin, salt, and pepper to the skillet and stir to coat the jackfruit.
- 7. Pour the BBQ sauce over the jackfruit and stir to combine.
- 8. Reduce the heat to low and let the jackfruit simmer for 15-20 minutes, stirring occasionally.
- 9. Serve the jackfruit BBQ on buns or as a topping for salads or rice bowls.
