Ingredients
- 1 eggplant
- 1 zucchini
- 1 yellow squash
- 1 red bell pepper
- 1 yellow bell pepper
- 1 onion
- 2 cloves of garlic
- 1 can of diced tomatoes
- 1 tablespoon of olive oil
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Salt and pepper to taste
Instructions
- 1. Preheat the oven to 400°F (200°C).
- 2. Slice the eggplant, zucchini, yellow squash, red bell pepper, yellow bell pepper, and onion into thin slices.
- 3. Mince the garlic cloves.
- 4. In a large baking dish, combine the sliced vegetables, minced garlic, diced tomatoes, olive oil, dried oregano, dried basil, salt, and pepper. Mix well to coat the vegetables evenly.
- 5. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- 6. Remove the foil and bake for an additional 10 minutes, or until the vegetables are tender and slightly browned.
