Ingredients

  • 1 eggplant
  • 1 zucchini
  • 1 yellow squash
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 onion
  • 2 cloves of garlic
  • 1 can of diced tomatoes
  • 1 tablespoon of olive oil
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Salt and pepper to taste

Instructions

  • 1. Preheat the oven to 400°F (200°C).
  • 2. Slice the eggplant, zucchini, yellow squash, red bell pepper, yellow bell pepper, and onion into thin slices.
  • 3. Mince the garlic cloves.
