Ingredients

  • 250g spaghetti
  • 1 ripe avocado
  • 1/2 lemon, juiced
  • 2 garlic cloves, minced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cooked prawns
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  • Cook spaghetti according to package instructions.
  • While the spaghetti is cooking, prepare the sauce. In a blender, combine the avocado, lemon juice, garlic, and a pinch of salt and pepper. Blend until smooth.
  • In a pan, heat up the cooked prawns and cherry tomatoes until the tomatoes start to soften.
  • Add the avocado sauce to the pan and stir until heated through.
  • Drain the spaghetti and add it to the pan. Toss until the spaghetti is coated in the sauce.
