Ingredients
- 2 pounds stewing beef, cut into chunks
- 4 large potatoes, peeled and diced
- 2 carrots, peeled and sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat.
- Add the beef chunks and cook until browned on all sides.
- Remove the beef from the pot and set aside.
- In the same pot, add the onions and garlic and cook until softened.
- Add the tomato paste, Worcestershire sauce, thyme, and rosemary. Stir to combine.
- Return the beef to the pot and add the potatoes, carrots, beef broth, and red wine.
- Bring the mixture to a boil, then reduce heat and simmer for 1-2 hours, or until the beef is tender.
- Season with salt and pepper to taste.
