Ingredients

  • 2 pounds stewing beef, cut into chunks
  • 4 large potatoes, peeled and diced
  • 2 carrots, peeled and sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  • In a large pot, heat some oil over medium heat.
  • Add the beef chunks and cook until browned on all sides.
  • Remove the beef from the pot and set aside.
  • In the same pot, add the onions and garlic and cook until softened.
  • Add the tomato paste, Worcestershire sauce, thyme, and rosemary. Stir to combine.
  • Return the beef to the pot and add the potatoes, carrots, beef broth, and red wine.
  • Bring the mixture to a boil, then reduce heat and simmer for 1-2 hours, or until the beef is tender.
  • Season with salt and pepper to taste.
