Ingredients
- 1 pound chicken breast, cut into bite-sized pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can diced tomatoes
- 1 cup chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup uncooked rice
- 1 cup frozen corn
- 1 can black beans, drained and rinsed
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Turn on the Instant Pot and select the sauté function.
- Add the chicken and cook until browned, about 5 minutes.
- Add the onion, garlic, and bell peppers and cook for another 3 minutes.
- Add the diced tomatoes, chicken broth, cumin, chili powder, paprika, salt, and black pepper. Stir to combine.
- Add the rice, corn, and black beans. Stir to combine.
- Close the Instant Pot and select the manual function. Set the timer for 10 minutes.
- Once the timer goes off, let the pressure release naturally for 5 minutes, then use the quick release to release any remaining pressure.
- Stir in the cilantro and serve with lime wedges.
