Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup uncooked rice
  • 1 cup frozen corn
  • 1 can black beans, drained and rinsed
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  • Turn on the Instant Pot and select the sauté function.
  • Add the chicken and cook until browned, about 5 minutes.
  • Add the onion, garlic, and bell peppers and cook for another 3 minutes.
  • Add the diced tomatoes, chicken broth, cumin, chili powder, paprika, salt, and black pepper. Stir to combine.
  • Add the rice, corn, and black beans. Stir to combine.
  • Close the Instant Pot and select the manual function. Set the timer for 10 minutes.
  • Once the timer goes off, let the pressure release naturally for 5 minutes, then use the quick release to release any remaining pressure.
  • Stir in the cilantro and serve with lime wedges.
