Ingredients

  • 2 cups cooked jasmine rice (preferably refrigerated overnight)
  • 1 tablespoon coconut oil
  • 1 cup diced chicken breast
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 red chili, sliced
  • 1 cup diced vegetables (carrots, peas, bell peppers)
  • 2 eggs, beaten
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon kecap manis (sweet soy sauce)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Sliced cucumber for garnish

Directions

  1. 1

Heat coconut oil in a large wok over high heat until shimmering.

  2. 2

Add chicken and cook until browned and cooked through, about 6-8 minutes.

  3. 3

Push chicken to the side and add garlic, onion, and chili, stir-frying for 1 minute.

  4. 4

Create a well in the center and pour in the beaten eggs, allowing them to set slightly before scrambling.

  5. 5

Add diced vegetables and cook for 2-3 minutes until tender-crisp.

  6. 6

Incorporate the cooked rice, breaking up any lumps and mixing thoroughly.

  7. 7

Add soy sauce, oyster sauce, and kecap manis, stirring until rice is evenly coated and heated through.

  8. 8

Season with sesame oil, salt, and pepper. Garnish with green onions and cucumber slices before serving.

Chef's tip

For optimal flavor, use cold, day-old rice to prevent sticking and achieve a classic fried rice texture.
