Ingredients
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 bell pepper, chopped
- 1 zucchini, chopped
- 1 cup cauliflower florets
- 1 cup broccoli florets
- 1 cup green beans, trimmed
- 1 can diced tomatoes
- 1 tbsp garam masala
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp cinnamon
- 1/2 tsp cayenne pepper
- 1/2 cup chicken broth
- 1/4 cup chopped fresh cilantro
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned, about 5 minutes.
- Remove chicken from skillet and set aside.
- Add onion, garlic, and ginger to the skillet and cook until onion is translucent, about 3 minutes.
- Add bell pepper, zucchini, cauliflower, broccoli, and green beans to the skillet and cook until vegetables are tender, about 10 minutes.
- Add diced tomatoes, garam masala, turmeric, cumin, coriander, cinnamon, and cayenne pepper to the skillet and stir to combine.
- Add chicken broth and bring to a simmer.
- Add chicken back to the skillet and simmer until chicken is cooked through, about 10 minutes.
- Stir in cilantro and season with salt and pepper to taste.
- Serve hot over rice or with naan bread.
