Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1 cup green beans, trimmed
  • 1 can diced tomatoes
  • 1 tbsp garam masala
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp cinnamon
  • 1/2 tsp cayenne pepper
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken and cook until browned, about 5 minutes.
  • Remove chicken from skillet and set aside.
  • Add onion, garlic, and ginger to the skillet and cook until onion is translucent, about 3 minutes.
  • Add bell pepper, zucchini, cauliflower, broccoli, and green beans to the skillet and cook until vegetables are tender, about 10 minutes.
  • Add diced tomatoes, garam masala, turmeric, cumin, coriander, cinnamon, and cayenne pepper to the skillet and stir to combine.
