Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 cup cauliflower florets
  • 1 cup broccoli florets
  • 1 cup green beans, trimmed
  • 1 can (14 oz) diced tomatoes
  • 1 tbsp garam masala
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp cinnamon
  • 1/2 tsp cayenne pepper
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp olive oil
  • Salt and pepper to taste

Directions

    Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

    Season chicken with salt and pepper and cook until browned, about 5 minutes. Remove and set aside.

    In the same skillet, add remaining olive oil and sauté onion, garlic, and ginger for 3 minutes until fragrant.
