Delightfully balanced and full of flavor, this modern Indian dish combines fragrant basmati rice and protein-packed chickpeas in a rich, aromatic sauce. Infused with authentic spices and creamy coconut milk, it’s an inviting meal for any occasion, offering a cozy escape to the flavors of India.

Ingredients

  • 1 cup basmati rice
  • 1 can chickpeas, drained and rinsed
  • 1 large onion, finely diced
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp coconut oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup vegetable broth
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro for garnish

Directions

  1. 1

Rinse basmati rice under cold water. In a pot, combine rice with 3 cups of water and a pinch of salt. Bring to a boil, then reduce to a simmer, covering partially, for 10-12 minutes. Once cooked, drain and set aside.

  2. 2

In a large skillet, heat coconut oil over medium heat. Add diced onion, minced garlic, and grated ginger, sautéing until soft and fragrant.

  3. 3

Stir in ground cumin, coriander, turmeric, cinnamon, and cayenne pepper, cooking for an additional minute.

  4. 4

Add chickpeas, diced tomatoes, vegetable broth, and coconut milk to the pan. Stir and bring to a simmer.

  5. 5

Simmer uncovered for 10-15 minutes, allowing the flavors to meld, stirring occasionally.

  6. 6

Season with salt, pepper, and lime juice. Mix gently and adjust seasoning if necessary.

  7. 7

Serve the chickpea curry over cooked basmati rice. Garnish with fresh cilantro leaves.
