Ingredients
- 1 cup basmati rice
- 1 can chickpeas, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1/2 cup coconut milk
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large skillet, heat oil over medium heat. Add onion, garlic, and ginger, sauté until fragrant.
