Ingredients

  • 4 slices of whole wheat bread
  • 1 cup boiled and mashed potatoes
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped tomatoes
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons butter
  • Optional: 2 tablespoons green chutney or schezwan sauce

Directions

    In a bowl, mix mashed potatoes, onions, bell peppers, tomatoes, turmeric, cumin, coriander, chili powder, and salt.

    Spread butter or ghee on one side of each bread slice. Optionally, spread green chutney or schezwan sauce on the other side.

    Spread the potato mixture evenly over the chutney or sauce side of two slices.

    Top with the other two slices, butter side facing out.

    Heat a pan over medium heat and toast sandwiches until golden brown on both sides.
