Ingredients
- 2 cups basmati rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp chili powder
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1 cup cooked chickpeas
- 1 cup coconut milk
- 1 cup water
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
- In a large pot, heat some oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion, minced garlic, and grated ginger. Cook until the onion is translucent and the mixture is fragrant.
- Add the turmeric powder, garam masala, and chili powder. Stir well to coat the onion mixture with the spices.
- Add the mixed vegetables and cooked chickpeas. Stir to combine.
- Add the rinsed basmati rice to the pot and stir gently to mix everything together.
- Pour in the coconut milk and water. Season with salt to taste.
- Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid has been absorbed.
- Remove the pot from the heat and let it sit, covered, for another 5 minutes.
- Fluff the rice with a fork and garnish with fresh cilantro before serving.
