Ingredients

  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 cup cooked chickpeas
  • 1 cup coconut milk
  • 1 cup water
  • Salt to taste
  • Fresh cilantro for garnish

    Rinse the basmati rice under cold water until clear; drain.

    Heat oil over medium heat in a large pot. Add cumin seeds until they sizzle.
