Ingredients

  • 2 cups basmati rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp chili powder
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 cup cooked chickpeas
  • 1 cup coconut milk
  • 1 cup water
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  • Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
  • In a large pot, heat some oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  • Add the chopped onion, minced garlic, and grated ginger. Cook until the onion is translucent and the mixture is fragrant.
  • Add the turmeric powder, garam masala, and chili powder. Stir well to coat the onion mixture with the spices.
  • Add the mixed vegetables and cooked chickpeas. Stir to combine.
  • Add the rinsed basmati rice to the pot and stir gently to mix everything together.
  • Pour in the coconut milk and water. Season with salt to taste.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid has been absorbed.
  • Remove the pot from the heat and let it sit, covered, for another 5 minutes.
  • Fluff the rice with a fork and garnish with fresh cilantro before serving.
