About this recipe

This IC-friendly dinner offers a soothing and delicious meal ideal for managing interstitial cystitis. Enjoy flavorful ground turkey, fresh vegetables, and a perfect blend of spices that won't irritate sensitive bladders.

Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes, no added salt
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh cilantro
  • Cooked white rice, for serving

Directions

  1. 1

Heat olive oil in a large skillet over medium heat. Add ground turkey, seasoning with salt and pepper, and cook until browned.

  2. 2

Add onion, garlic, red and green bell peppers to the skillet. Cook until vegetables are tender, about 5 minutes.

  3. 3

Stir in diced tomatoes, black beans, chili powder, cumin, paprika, and oregano.

  4. 4

Bring mixture to a simmer and cook for 10-15 minutes, allowing flavors to meld.

  5. 5

Adjust seasoning with additional salt and pepper if necessary.

  6. 6

Stir in fresh cilantro before serving.

  7. 7

    Serve over cooked white rice.

Chef's tip

Ensure no irritant spices are used, and opt for low-salt versions of canned ingredients to better suit those with interstitial cystitis.
