Ingredients
- 1 lb. ground turkey
- 1 cup quinoa
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 tsp. cumin
- 1 tsp. paprika
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup chicken broth
- 1/4 cup chopped fresh cilantro
Instructions
- In a large skillet, cook the ground turkey over medium heat until browned.
- Add the quinoa, bell pepper, onion, garlic, cumin, paprika, salt, and black pepper to the skillet. Cook for 5 minutes, stirring occasionally.
