Ingredients
- 1 lb flank steak
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 can black beans, drained and rinsed
- 1 cup cooked brown rice
- 1 avocado, sliced
- 1/2 cup corn
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1 lime, cut into wedges
Instructions
- Preheat the oven to 400°F.
- In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Rub the spice mixture all over the flank steak.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Add the steak and sear for 2-3 minutes on each side.
- Transfer the skillet to the oven and bake for 8-10 minutes, or until the steak reaches your desired level of doneness.
- Remove the skillet from the oven and let the steak rest for 5 minutes before slicing.
- To assemble the bowls, divide the black beans, brown rice, avocado, corn, diced tomatoes, and cilantro among four bowls.
