Ingredients
- 1 block of firm tofu
- 1/2 cup of black beans
- 1/2 cup of diced tomatoes
- 1/2 cup of diced bell peppers
- 1/4 cup of diced onions
- 1 clove of garlic, minced
- 1 tablespoon of nutritional yeast
- 1 teaspoon of turmeric
- 1/2 teaspoon of cumin
- Salt and pepper to taste
- 1 tablespoon of olive oil
Instructions
- 1. Heat the olive oil in a large skillet over medium heat.
- 2. Add the onions and bell peppers and sauté for 2-3 minutes.
- 3. Add the garlic and sauté for another minute.
- 4. Crumble the tofu into the skillet and stir to combine with the vegetables.
- 5. Add the black beans, tomatoes, nutritional yeast, turmeric, cumin, salt, and pepper.
- 6. Cook for 5-7 minutes, stirring occasionally, until the tofu is heated through and the vegetables are tender.
- 7. Serve hot and enjoy!
