Ingredients

  • 1 block of firm tofu
  • 1/2 cup of black beans
  • 1/2 cup of diced tomatoes
  • 1/2 cup of diced bell peppers
  • 1/4 cup of diced onions
  • 1 clove of garlic, minced
  • 1 tablespoon of nutritional yeast
  • 1 teaspoon of turmeric
  • 1/2 teaspoon of cumin
  • Salt and pepper to taste
  • 1 tablespoon of olive oil

Instructions

  • 1. Heat the olive oil in a large skillet over medium heat.
  • 2. Add the onions and bell peppers and sauté for 2-3 minutes.
  • 3. Add the garlic and sauté for another minute.
  • 4. Crumble the tofu into the skillet and stir to combine with the vegetables.

  • 6. Cook for 5-7 minutes, stirring occasionally, until the tofu is heated through and the vegetables are tender.
