About this recipe

This Chicken Caesar Salad offers a fresh take on the traditional favorite, incorporating nutritious ingredients and a light dressing for a balanced meal. The grilled chicken adds heartiness, while homemade croutons and a burst of lemon-laced dressing elevate your salad experience.

Ingredients

  • 1 head Romaine lettuce
  • 2 boneless, skinless chicken breasts
  • 1 cup croutons
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper to taste

Directions

  1. 1

Preheat the grill to medium-high heat.

  2. 2

Season chicken breasts with salt and pepper. Grill for about 6-7 minutes per side until cooked through, then set aside.

  3. 3

Wash and chop Romaine lettuce into bite-sized pieces. Place in a large bowl.

  4. 4

In a separate pan, heat olive oil and sauté garlic until fragrant. Add croutons and toast until golden. Set aside.

  5. 5

In a small bowl, whisk together olive oil, Worcestershire sauce, mustard, lemon juice, salt, and pepper to create the dressing.

  6. 6

Slice grilled chicken into strips. Toss lettuce with three-quarters of the dressing and arrange on plates.

  7. 7

Top the lettuce with chicken strips, croutons, and Parmesan cheese. Drizzle with remaining dressing and serve.

Chef's tip

For added flavor, consider adding a hint of anchovy paste to the dressing.
