Ingredients

  • 8 ounces whole wheat spaghetti
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  • Cook the whole wheat spaghetti according to package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  • Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the cherry tomatoes and cook until they start to soften, about 2 minutes.
  • Add the cooked spaghetti and baby spinach to the skillet. Toss until the spinach wilts and the ingredients are well combined.
  • Return the shrimp to the skillet and toss to heat through.
  • Remove from heat and sprinkle with grated Parmesan cheese. Season with salt and pepper to taste.
