- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 jalapeno, seeded and minced
- 1 lime, juiced
- 4 small whole wheat tortillas
- 1/2 cup shredded lettuce
- 1/4 cup shredded cheddar cheese
- 1/4 cup Greek yogurt
- Salsa for serving
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, combine the chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper.
- Rub the chicken breasts with olive oil, then sprinkle the spice mixture evenly over both sides of the chicken.
- Place the chicken on a baking sheet and bake for 20-25 minutes, or until cooked through and no longer pink in the center.
- While the chicken is cooking, prepare the salsa by combining the diced tomatoes, red onion, cilantro, jalapeno, and lime juice in a bowl. Season with salt and pepper to taste.
- Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side.
- Slice the cooked chicken into thin strips.
- To assemble the tacos, place a spoonful of the salsa on each tortilla, followed by some shredded lettuce, sliced chicken, shredded cheddar cheese, and a dollop of Greek yogurt.
